
Little Coyote is James Beard award-nominated Chef Erik Niel’s ode to smoked meats and fresh tortillas —two things that stole his heart during his time living in Texas. Located in the St. Elmo neighborhood of Chattanooga, TN, the restaurant opened in 2023 alongside celebrated sister restaurants Easy Bistro & Bar(2005) and Main Street Meats (2014). Promising a flavorful mix of Texan, Cuban, Caribbean and Southwestern cuisines, the food and drink menus feature melt-in-your-mouth barbecue and housemade corn tortillas accompanied by small plates, side dishes, moles and condiments, as well as an extensive collection of agave spirits. The casual atmosphere serves as a temporary escape to the Southwest, complete with terracotta tiles, turquoise accents and an expansive outdoor deck, designed by architects Tinker Ma in partnership with Erik’s talented wife, Amanda.

The standout hotel is conveniently situated at the intersection of the downtown Warehouse and Glenwood South Districts, a short walk from the convention center and the best entertainment Raleigh has to offer. In recent years, the Warehouse District has been reborn as a center for arts and culture, while Glenwood South has become a popular hotspot amongst an exploding population of young professionals. Armed with a strong concept and shell of a former restaurant space, the Niels called upon Green Olive tocapture the spirited personality of their vision. Our wide-ranging experience with chef-driven and counter-service models made our design expertise a natural fit for their new venture. After spending time with Erik and Amanda in their Chattanooga restaurants, we embarked on establishing a name for the new eatery sure tostand apart from the competition within the market’s rapidly growing culinary landscape. “Little Coyote” quickly became a favorite amongst both teams, as a playful spin on the Spanish word ‘coyotito’, an idiomatic reference to a siesta after a large meal. We then immersed ourselves in logo development and branded applications including signage, murals, menus, website, apparel and collateral touchpoints. Both casual and playful at its core, our approach to the brand visuals suggest authenticity, approachability, and the high level of craft that informs an experience at Little Coyote from beginning to end.
