Founder Scott Witherow and his team are transforming beans into bars, selling an array of exquisite chocolate bars--riddled with cocoa nibs, coffee ground, and salt and pepper. Witherow, a Cordon Bleu graduate and former pastry chef at F. Scott's in Nashville, has spent time in the kitchens of Tennessee as well as Fat Duck and Nobu in England. Stages have included stints with Grant Achatz at Alinea and Frank Stitt at Highlands Bar and Grill in Birmingham. Led by Graphic Designer Meggan Talley, Green Olive Media is handling packaging and website development.
